They call it a taco casserole.
My recipe:
1)
250 g pasta(cooked)
2)
Cooked in a pan together:
2 bags of taco seasoning.
400g minced meat( I used lamb, even though it is supposed to be beef)
1 chopped red chili
200 ml sour cream
200 ml water
Add Step 1+ 2 in a oven pan
Layer with sliced tomatoes, then grated cheese.
Pop in oven for 10-20 mins( Until tomatoes have gone soft and cheese is golden)
NIIIIiiiiice.

Made a few dishes today. Only took pics of the Buffalo wings I made for Bestie which is what I'm eating now, as well as a greenbean, broccoli, peas, and carrot salad topped with balsamic Vin and Evoo.
While I fight with photobucket so I can post a picture of this, I'll describe it here:
large bed of baby lettuce mix grown in a farm up the road from here,
three slices of pepper bacon chopped up, grown and butchered in the neighbor county,
A spoonful of very hot salsa, the ingredients had been grown, canned, and later processed into salsa via the neighboring county,
Two sunside up eggs from fully pastured local hens (omg the yolks are soooo tasty)
And some cheese from...yep, pasture raised local cows.
Yeah, it might cost more to buy this food, but the taste is so worth it. And it's satisfying enough to be one of two meals for the day.
(It would've helped, I suppose, if I hadn't typed "yahpp" instead of "yahoo". )

This was way too much food, haha.
And I would hide my face in you and you would hide your face in me, and nobody would ever see us any more.
It bugs me you can't get a bowl of something like this at 99% of restauraunts. All those ingredients are really cheap and incredibly healthy too, its just the labor time and peoples aversion to anything not meat and potato/bread.

The following two pics are my 2 fav sweet foods this spring.
First:
1/2 cup coconut oil, 1/4-1/2 cup nut butter, 1/4 cup cocoa powder (plain, not mix), 1/2 tbsp honey, bit of vanilla extract, and salt. Makes a jar full of little chocolates for when I am craving chocolate bar/candy. Lasts me a month unless I'm sharing. Best if sucked on rather than chewed up, allowing the body/mind to satiate without eating mindlessly.
Second:
My 'ice cream' replacement it seems is a scoop of freshly ground almond nuts and 2 scoops local yogurt. May be eaten alone, or mixed with some chocolate syrup, local jam, local honey, or similar flavorings depending on mood. I'm looking forward to having fresh berries to put into it. This gives the cold creamy feel I want from ice cream, with some crunch from the ground almonds to keep the texture interesting.
This last one has become my third meal of the day, (on days when I eat three meals). It's that satisfying.

I actually don't recommend my 'cooking'. I'm horrible with combining flavors, and my kitchen skills are primitive at best. For example, when I buy my red meat, I get it ground because I don't know how to cook roasts or steaks without trashing them. When I experiment...even my family runs...with good reason

Oh that? Yeah, anti-gmo is currently a major influence in what foods I buy. I think I drive my facebook friends nuts due to my constant sharing articles and such about gmos.
I also try to aim for local foods. This has been difficult due to having a taste for usa southwest foods and mexican food, but living in the usa northwest.
I do fall off the wagon about 2-3 times a week, but my tastes are gradually changing. It's becoming easier to make these choices based off those two values (non-gmo &/or local).
