I will answer you here about Amy Lee as we are more on topic.
I have read that intuitive types are typically more fidgety than sensors, mainly because they have less control over their bodily movements.
I don't see this as sufficient evidence to reject SEI for Amy Lee however, I think a sensory type can be fidgety for a variety of reasons, one of those reasons you brought up yourself, I couldn't base myself on judgments such as "this person fidgets alot, therefore not a sensor", it's not a serious way of typing people, imo.
Also, I did say she was subtype but she could be a balanced subtype, she seems to have alot of and alot of , about evenly.
