    Sandwiches, oatmeal, other breakfast food like scrambled eggs and toast if we're talking under five minutes.

    If you want something fancier but still easy, try spaghetti aglio e olio (I like to add mushrooms too) or spanish omelettes.

    Buy good quality bread; I'm not talking about Webbers or some Wonder bread stuff; I'm talking about a real Sourdough from your local grocery store (read the label and make sure it doesn't have shortening in it). Take @lungs's advice and have bread in the freezer; you can thaw it out in a toaster oven in no time or wrap in a paper towel and microwave for a few seconds; you can make a quick european cheese sandwich, with goat cheese, olive oil; and some chopped greens; you can make a full salad by having greens in the fridge too.

    You can have pita bread in the freezer; wrap them up in individually in plastic bags and then put them individually in a plastic bag; this will allow you to take them out and defrost them and not get them stuck to each other; freeze pizza sauce, cheese, chicken, and other toppings take them out and make a home made pizza; throw everything together and stick them in a toaster oven.

    Make dandelion greens in advance and freeze them too to make a simple open faced sandwich; cook the greens with a good oil on the stove for about 20min add chopped onion, salt garlic cook for another 10 to 15min; put in a portion sized container and freeze them; don't freeze things in big bulks because defrosting the whole things is cumbersome; take each portion out and thaw in a microwave; get your bread out and thaw or toast it spread your greens on top with sliced tomato and you're good.

    I usually make beans and freeze them in small portions so when I want to add beans to a salad or make refried beans, I can take just that portion out and defrost it.

    I freeze a lot of things in convenient portions, just because if you do it right, you can have a ready to eat meal any time and it doesn't have to be out of a can, for instance you can freeze barley soup that's so easy to make:

    Mom's Barley Soup (Barley may be substituted for rice, small pasta like shells, farro, etc)

    Add 1/2 cup barley to three cups of water; when it comes to a boil add one 1" cubed potato; add 1 grated tomato and grated carrot, reduce heat to simmer; add salt, pepper, and any other dried herbs and spices you may like (bay leaf, oregano, etc); cook until barley is the desired consistence (I like mine super soft); for the last step add chopped dill and cilantro and let simmer for no more than 1 minute and turn the soup off.

    You can freeze this in individual portions.


    You can also freeze tortillas, flour or corn, just wrap them up individually in plastic bags and you can freeze shredded cheese for a quick quesadilla.

    i make more than i need so i can reheat later when i don't feel like cooking. just have to pop something in the microwave. but that's if you don't mind eating the same things over and over. i've also started making five salads at a time in separate tupperware containers for lunch during the week. you can save a lot of time over the week if you're willing to give a little up on the weekend.

    on the same page with maritsa with the quesadillas. i almost always have some tortillas and cheese around for a quick dinner because i'm almost never not in the mood for a quesadilla if everything else fails, and it takes five minutes to grill it up.

    then there's the obvious - sandwiches (maybe grilled cheese and ham if you want something hot), canned soups, etc.

    I like TV dinners, too, but I go for the Boston Market or Marie Callender's brands. Stouffers on occasion. The rest just aren't as good or filling. Out of the three mentioned, Marie Callender's is my favorite because they have the best taste IMO.

    Nnnno but seriously. It changes every week--right now it's boiling pasta. As an unchef I've learned that to burn something would mean to have done something, so I have grown to like boiling.

    Good ideas, everyone. If I had to make a last minute meal right now it would be bean soup and cornbread. Bear Creek brand bean soup and Marie Callender's cornbread mix. Both are just add water mixes. Both came from Big Lots, by the way. Agree about the Marie Callender frozen foods, by the way, although Scapegrace's Hungry Man offering looks mighty tasty.

    Potatoes, onions, and eggs. Cook the potatoes, then add onion, then add eggs and stir. A good ratio is about 2 small potatoes, 1 small onion, 3 eggs. The ingredients go together very well. I usually eat them alone, but you can also put them in a tortilla to make a burrito; maybe add salsa if you like that, though personally I don't like vinegar with eggs.

    Salo (smoked pig's fat) with fresh onion and bread delicious. Tomatoes work if one needs to be social and can't eat onion.

    I make a chickpea flour omelet. I mix 1/3 cup of chickpea flour and 1 tablespoon of nutritional yeast with water. I cook it like a pancake. I usually top it with vegan mayo and sriracha.

    i don't have any favorite last minute meals. this week i've been eating chicken (pre-cooked from store and already cut up) with avocado and soy sauce. it takes like 5 minutes or less to "prepare."
