We can't assume all couples are duals. vegeta and bulma got together because Akira needed Trunks to be a saiyan, not because it was a perfect relation. Akira himself has almost never shown interest in making very good couples, also because of the heavy influence of his editors.
Goku SEE - As a kid he was energic, curious and "physical". IEE tend to be shy and contemplative as kids. I would not type him ESE because the original Goku hasn't so much Fe, neither PolR Ni.
Vegeta SLE - But LSI (as suggested by other users) could be another good take.
Gohan IEE - Shows too much reactive Se for an EII, yet it isn't his main approach in life and he doesn't value it. He is also a lot more positive than emo/tragic EIIs.
Videl SEE/SLE/LSI/ESI? - I don't think she is se demonstrative. Her Se it's quite visible. She blackmails Gohan all the time to get some advantage. I see more strong Se and Ti in general.
Trunks ESI/EII - Idk. He doesn't search for status or personal advantages as ESIs/LSIs. He just want to protect people. He is more selfless, like an EII. His Se and rage is different from that of Gohan and pop ups only when is 100% needed (and he does often stupid things when happens), while Gohan reacts easily with Se also when ther's no danger at all (like reacting to insults about his family).

It's hard to type fictional characters, especially anime characters, because they go from one extreme to the other real quick. But more or so it goes like this and I'll try to justify my guesses:
Goku - ESE (yes he does have strong Se but I believe that's his demonstrative, primarily he approaches situation from an Fe standpoint)
Piccolo Jr., Android 18 and android 17 - stereotypical LSI
Gohan - IEE or EII but I'm leaning more towards IEE for old Gohan (doesn't like to fight, very humanitarian towards anumals etc. He seems very delta valuing)
Vegeta - SEE - very impulsive, very narcissistic, he is the evil version of general SEE, not quite cold and calculating as King Piccolo or Frieza or Cell
King Piccolo, Frieza, Cell, all main boss villains - stereotypical SLE.
Bulma - ?? (her personality varies a lot since DB classic, I'm gonna guess EIE just 'cause of her relationship with vegeta)
Gynyu - some weird version of LSE

Goku is SEE - Fi. Closer to ESI's behaviour, act softer and nicer with other people. But that lusting for battle behaviour is clearly Se lead. SEE - Se are like Luffy from One Piece, more blunt straight forward and more energetic, idiotic.
Vegeta is Beta ST lol. Compare to Goku he's clearly a T type, doesn't have any SEE's energetic energy.
For Frieza I tend toward EIE more than SLE. He's too much a pussy for a SLE.
Yes the rest of the main villain seem SLE. It's a typical Se lead (main character) vs Se lead (villain) competing in combat.
Gohan Delta. SLI seem fit more than NF.

There is nothing Beta about vegeta, he talks about Saiyan pride but everyone knows deep down he didn't care his race was killed. All he cares is about power for himself. He's just proud of shoving saiyan's power into his enemy's faces. He is classical gamma SEE, impulsive, narcissistic, gets beat 12x in a row and as soon as he gets healed he wants to come back to prove he is stronger than everyone else.
Frieza got in Namek and assimilated everything real quick, then explained to the nameks all that was necessary for him to achieve eternal life, that's more Se-Ti. An EIE would be someone like naruto, delivering speeches of hope, using emotional appeal, getting his own hand cut with a kunai and telling everyone he swears on his grave he wiill save them all etc.
No, that's princess Vegeta, he likes to beat little kids, hit kakarot behind his back in majin buu saga when he saw he couldn't win, then went to kill himself for nothing, thinking this was enough to defeat buu, only wasting everyone's time.
Come to think about it, adult Gohan looks somewhat like Clark Kent in a way. I'll have to think about his type again.
Yes and Goku is SEE is as clear as day. Even by quadra values, ESE has no place in here, this manga is totally combat/violence focus, about the strong vs the strong. We have to agree to disagree...
Anyway, I think Naruto is IEE. Hashirama seem more fit for EIE. Naruto manga is Delta as fuck
