I was going to make us veggie pizza toast for this (meatless) Friday because I do eat bread occasionally, but, I have to run to the local grocery anyway, so will pick up zucchini and make mine into zucchini pizza boats (my husband isn't a zucchini fan, or green-veggie fan, so I try not to press it, but instead sneak it in here and there)... I expect it to be satisfying!

Poke ('po-kay') is surprisingly easy to make. You basically just make some rice and put raw fish, avocado and/or seaweed, and seasoned rice vinegar (sushi vinegar) in it. It is typically served cold. If you like sushi you will probably like poke.
