What are some good foods for carbs? Veggies, I guess?
Fruit and grains. All things considered veggies tend to be on the lower side of grams of carbs per serving (cps).
Your body generally metabolizes fruit carbs more quickly than grain carbs so that is also something to keep in mind.

Some veggies have more carbs than other veggies. For example potatoes (because of their starch content)
will have way more cps than collards, etc...

Never been a big grain exploring person
I personally LOVE barley. IMO it is the least underrated grain in existence. I also enjoy lentils and split peas.
I like corn a lot but it isnt as nutritionally dense as those previously listed, beans (not technically a grain but meh),
brown rice and oatmeal. Some people really love quinoa and couscous but I am just not a big fan of either.

Carbs don't make me feel fuller for longer, meat does. Grains leave me feeling constantly hungry and not satiated when I do eat. I finally started losing fat while on a low carb, high fat diet. The fat (coconut oil, mct oil) helped me feel satiated quickly, and the protein help me go longer between meals without the cravings. Grains and even complex carbs mess with my bloodsugars too much, giving me the highs and lows. I can get by with 1-2 meals a day on low carb, but crave food 4-6 times a day on higher carbs. Grains make it more difficult for me to lose fat.

With that said, due to finances, we are having to resume eating grains and higher carbs again. I've already started gaining weight again despite trying to be careful. I hate thinking about food this much. But we are still trying to keep it to whole foods, less processed.

For those going meatless, consider adding live fermenting veg into your diet. This will increase B vitamins, and the sourness reduces cravings for sugars/sweeter foods. Remember that vegetarian animals have larger stomachs and larger bodies to support those innards. And that while they might allow the veg/grains to ferment in their stomachs thus giving them more bioavailable proteins and vitamins, we as humans can do that in pots on our counters instead.
