I'm constantly looking to align the real with the ideal.I've been more oriented toward being overly idealistic by expecting the real to match the ideal. My thinking side is dominent. The result is that sometimes I can be overly impersonal or self-centered in my approach, not being understanding of others in the process and simply thinking "you should do this" or "everyone should follor this rule"..."regardless of how they feel or where they're coming from"which just isn't a good attitude to have. It is a way, though, to give oneself an artificial sense of self-justification. LSE

I made a sausage rigatoni yesterday, it was good, but I need to remove the casing and use spicy sausage next time. Also would have been better if I made my own tomato sauce.
I'll do prepared food but if I did that I rather just get a bag of Bertolli's or something like that.
But I want to learn some basic italian stuff so I don't feel so ignorant. These seem easy enough.

A never ending traditional dish: pasta con pesto (alla genovese) - you need to find a place where you can buy good pesto, though
another one, Risotto ai funghi porcini (porcini mushrooms):

another one, this is a mediterranean classic, you can find it all along the coast down to greece - fried squid; the squid must be FRESH!!
then going down towards rome, you have the classic "carbonara" pasta, which should be made with pecorino romano as additional cheese, NEVER parmigiano / grana
