I'm constantly looking to align the real with the ideal.I've been more oriented toward being overly idealistic by expecting the real to match the ideal. My thinking side is dominent. The result is that sometimes I can be overly impersonal or self-centered in my approach, not being understanding of others in the process and simply thinking "you should do this" or "everyone should follor this rule"..."regardless of how they feel or where they're coming from"which just isn't a good attitude to have. I took a sourdough bread loaf and sliced it in half. I covered each half with pesto. I layered sliced tomato, red onion, olives, and marinated artichoke hearts. Then I sprinkled Gorgonzola cheese over it. THEN I spreaded garlic jack over it.
bake in the oven at 400 for 30 minutes.

Corn tortillas (the thick, soft ones), beans (black or red), and hard Central American cheese (queso seco) altogether make for a very quick-to-prepare and filling meal. (If you get the canned beans that already come seasoned, that is.) I came home hella hungry cuz I hadn’t eaten lunch at work (as usual) and I stayed at work late; I didn’t have time to cook a whole dinner, so I just ate that for dinner.
2 tortillas, like 5 or 6 tablespoons of seasoned canned black beans, and 1 chunk of queso seco/hard cheese crumbled on top of the beans and tortillas. I ate quite voraciously. Surprisingly nutritional and tasty!

I had lemon pepper chicken with red potatoes and broccoli. It was Meh-diocre. I'd much rather have a man's ass. J/k but yeah it wasn't that good.
Should be none for me to learn how to transcend from base desires even just a little, but then I already ate chocolate and night has just started

gluten free elbow pasta with some extra virgin olive oil, grated pepper and grated parmesan (aged 18-24 mos, italian), some tempeh (raw, it doesnt need to be cooked), and some steamed KALE that i put in the steamer basket of my rice cooker to steam with ~1.5 cups water in the cooking component. those three components of my meal were all kinda separate from each other. oh yeah, when i started getting hungry when i got home after my massage, i ate a strawberry and rhubarb Siggi's yogurt and then some dried sour cherries, super yum.

i added some maple syrup to toasted buckwheat groats - called kasha when they are toasted. I bought them from the co-op in the bulk bin already toasted. they have them raw, too. the toasting adds some flavor dimension i think and cuts down on cooking time - that i cooked on the stovetop. Buckwheat has a lower glycemic index than oats. it's a nice option for variation from oats all the time
I also made a scrambled eggs south asian style dish which i will make again. i've been lazy about cooking eggs for myself lately bc I got into the habit of buying breakfast burritos at a nearby place and I havent been able to replicate those... not in that era of spending currently though.
Living alone and being the only one to feed, well, this is a good time of year for cooking.

Dry-brining 3 lbs of bone-in, skin-on chicken breasts in my fridge for 24ish hours - then will poach them and use them and their broth to make Hainanese-Inspired Chicken Rice.
I’ve followed Sohla El-Wayyly’s dry-brining method for preparing to sear sea scallops before and possibly something else that I’m forgetting; this is first time trying this on chicken! I’m excited.
I also looked up today a full list of cruciferous vegetables. I was kinda craving something cabbage-y and read that crucif veggies are especially healthful. I saw kohlrabi that looked in good condition at the grocery co-op and bought some. I’ve never cooked with it before so I’m excited! (Second time using that word in this post, haha.)
it’s pretty big, the one I got so maybe I will do multiple diff preparations (salad and soup?? Tbd).
