    Butternut squash soup, inspired by https://www.youtube.com/watch?v=WdTeln4Q9ZA. Tasted better than I expected (not a huge fan of squash/pumpkin).

    Had some pork chops afterwards. (Soup was better.)

    When I was pregnant I had to have lots of vegetables. I'd order a sandwich from the deli and instruct them to put every veggie they had on the sandwich. Spinach, olives, peppers, artichoke hearts, bell peppers, olives, tomato, pickle, sprouts, and lettuce.

    That's basically all I ate or I'd puke. lol I told my son "you're really a deli sandwich"

    I ate once a day. Just the sandwich.

    That sounds really good. I’ve been craving a lot of dairy (ice cream, cottage cheese) and fruits. I swear avocado and pretzel chips are a life-changing combo greater than the sum of their parts.

    Or if you have a sweet tooth, you can make a pie or a strudel with filo pastry. It should be safe to mix it in with apple, pear, and/or cranberries. Or at least that's what I'd do.

    @Poptart I toasted a mix of pumpkin and sunflower seeds and was surprised by how well they went with the soup. Plus they're healthy.

    The whole thing is healthy, partly because there's no frying or any saturated fats involved. That is, unless you opt for the bacon topping, but even then, it's not a big deal.

    I love toasted pumpkin seeds!! One of my favorite snacks.

    I drizzled some pumpkin oil on my soup because that’s what my relatives in Slovenia do when they make pumpkin soup lol.

    So you basically had pumpkin with pumpkin seeds and pumpkin oil. Did you also roast the skin of the pumpkin and use it as a topping?

    You have relatives in the balkans? That is cool. Croats and Slovenians have great culture and traditions, I'm a fan.

    I'm making butternut squash soup tonight, too. 'Tis the season.

    What's different about this round is for the broth, which is currently pressure cooking, I used some chicken feet. First time doing it, but I threw some other bones in there just in case.

    In general it's kind of fun for me to make bone broth. Over time I collect and freeze the bones from my various meals as well as odds and ends from the veggies and then when I have enough I throw it all into my Instant Pot, splash some vinegar in, salt, pepper, assortment of spices, fill it the rest of the way with water, and let it go for 2 hours. I get to make something nutritious and delicious out of what would otherwise be garbage.


    The only downside of everything right now is that I started the broth too late in the day and thus dinner will be a little delayed.
    Oh, to find you in dreams - mixing prior, analog, and never-beens... facts slip and turn and change with little lucidity. except the strong, permeating reality of emotion.

    I made Cranberry Brie Bites for us tonight to go with leftover chicken because I had all the ingredients since i had bought them to make at Christmastime and didn't (because I made a ton of other stuff).

    They're good! But I prefer make-ahead freezer appetizers for Christmas entertaining, and this isn't one. I thought they would look nice with my green Spinach Balls - which my Mom used to make and are an annual favorite, and are make-ahead.

    I've been adding asparagus to my meals lately. It's much less bland when you learn how to cook it and what to mix it with. And it's very healthy, supposedly.
