Nothing. If you're not interested in sugar, don't eat dessert.
Depends on your definition of a dessert. Dessert can be anything that concludes a meal, which implies it doesn't have to be anything sweet.
But if you want something sweet, then just choose low sugar food as dessert. Check keto recipes.
You can also just eat dark chocolate, some brands have 0 sugar. Not sure if they substitute fruit or other ingredient as a sweetener though.
I don't think it's good that you limit yourself too much like that though. Just try to eat things in moderation, you'll be happier. If you restrict a lot you'll just crave sweets even more.
Chia seeds for the fiber. You can probably add them to fruit or yogurt or something.

Could use coconut sugar. Or monkfruit. There’s plenty of sugar alternatives. May take some experimentation to see what you like and get used to cooking with new ingredients.

Yes, what does "sugar free" mean to you? And what is the purpose of this dessert? Something to cap off a personal dinner and will keep your glycemic load low, or something that will be shared and needs a more common appeal?
Fruity things can add sweetness without a ton of sugar. Fruit with chocolate. Fruit on rice pudding (I use maple syrup to sweeten mine a little more). Bacon wrapped dates. Often in the evening I'll make myself some sort of creamy latte-esqu drink, like moon milk, hot chocolate, or tart cherry juice, all sweetened a little with either maple syrup or honey. I'll add all sorts of "extras" to them, especially like collagen powder, which provides some protein to help balance the sugars.
I eat a lot of fruit. It has fructose, but its also has other nutrients and fibre and its not processed. I eat lots of apples, like a hundred a month probably.
