Bison is pretty tasty. Ted Turner is a big bison promoter.
I think saying "bison" makes people feel less guilty about eating an animal we nearly wasted to extinction.

I'm interested in spirituality, yes, I'm interested in many different kinds of cultures and in what they believe. I'm Christian myself, so I believe that humans are actually supposed to be guardians of creation and protect nature. And it should start by treating animals with respect.
