DO YOU OR ANYONE YOU KNOW COMBINE CHEESE WITH WEIRD SHIT?!
If it's something common or cultural where you live can you explain yourself?

I don't eat cheese.

My brother puts ketchup on his macaroni. One time he used too much ketchup and my parents made him eat the whole pile. I made fun of him so they made me eat some too. It was disgusting.
Mozzarella, in the context of pizza; to adhere the toppings, and to make the overall human situation work better -- no extra cheese, light on cheese is best. I knew it was rotten milk since elementary school. Milk's same with me. Ingredient, part of a greater whole, will go along with limited milk to make overall interpersonal situation work, if it's important to drink/use milk. Won't enjoy it much at face value. Sour cream is a NO. Butter rules as ingredient and I love to make/use clarified butter.

I like cheese.
Dark chocolate and smoked gouda is quite nice, idk why that would be disgusting. I'd eat cheese with other things too. I haven't, but I would eat it with your suggestion of caramel, if it was in conjunction with apples - tart apple with light caramel coating and cheddar sounds fine to me. Lots of different kinds of cheeses, I'm sure you could find flavors that would pair well with many foods not traditionally eaten with cheese.
