    I went back to being vegan four weeks ago and I am looking for recipes. Share your recipes!!

    (I am also avoiding nightshades, so I am especially grateful for vegan recipes without tomatoes, peppers, eggplants, paprika).

    It's always good to plan your meals on a day to day basis so

    Armenian lavash with fried eggplant, hamus and any greens you like

    for dinner

    throw veg in the slow cooker so it's ready when you get home

    dice any veg you like and throw them in the slow cooker and when you get home you'll have stew. You can freeze diced herbs in advance and add it to the stew before you eat it to give it yummy flavor. You can also buy pre made rice from trader joes and serve the stew over rice of make beans

    I'm constantly looking to align the real with the ideal.I've been more oriented toward being overly idealistic by expecting the real to match the ideal. My thinking side is dominent. The result is that sometimes I can be overly impersonal or self-centered in my approach, not being understanding of others in the process and simply thinking "you should do this" or "everyone should follor this rule"..."regardless of how they feel or where they're coming from"which just isn't a good attitude to have. It is a way, though, to give oneself an artificial sense of self-justification. LSE

    Spaghetti squash! Add anything to it, but this is the best way to bake them - in rings: http://eatwithinyourmeans.com/how-to...ghetti-squash/ Spaghetti squash meals are 2-part prep for me - I get the squash baked early and it sits on the counter til I am ready to prepare the rest of the meal. (Its easy to fork apart the squash when its cooled a bit).

    Spaghetti squash was always my pasta replacement for spaghetti pasta, but recently I discovered zucchini noodles as a meal base, and I really prefer the less-distinct taste of zucchini noodles with tomato sauce, so this will be my go-to now for spaghetti dinners. There are many noodle makers, crank, hand held, even a Kitchenaid mixer add-on, and I am going to get one soon. Meanwhile my natural foods store has already-cut zucchini noodles in the produce department and I have gotten them twice now, once for spaghetti and once for a lasagna-like casserole, and my husband is happy with it. (I am trying to wean him away from carbs without him noticing it!).

    But I still like spaghetti squash baked in o-rings as the "bulk" base for a hardy healthy meal. My latest for spaghetti squash add-ins is just greens, onions, garlic and some Parmesan cheese. As to greens, my husband is not a fan of anything green, and I always want more, so I am glad he liked this: Swiss chard cut up then stirred in a pan with hot olive oil with fresh garlic, and let to cook on medium, covered, 10 minutes, then I add a whole large onion chopped and give it all a quick stir fry with the chard, and then toss in the with the prepared spaghetti squash to heat all through and then toss in some Parmesan. He really likes it and he didn't see that I used a huge bunch of swiss chard, because it cooked down so small....

    don't forget your fats like olive oil - very important if you're not getting animal fats

    potatoes are an great source of potassium and when not deep fried and drenched in a ton of butter they are good food.
    Armenians traditionally eat potatoes for breakfast by quickly frying big slices and wrapping it in a pita or lavash.

    since you're a working woman I don't know what kind of time you have in the mornings so you may need to take left over dinner for breakfast on some days so you should consider making bigger batches than usual


    Chickpeas and lentils are usually made into stews and also usually made into balela salad; you can make this for dinner and have it for lunch; for lunch you can have it over chips or pita chips, or any other preprepared grain

    That sounds amazing...it seems like nightshades trigger an autoimmune response and I miss tomatoes so freaking much. And potatoes...

    @Kim do you like spicy food? I rarely make the same recipe twice because I like trying new stuff, but I just did with this one and I probably will again.

    I'm sure vegetable broth could be used in place of the chicken. The yogurt in the ingredient list is just optional garnish.

    (I'm actually not sure how spicy it would be if you deseed the jalapeño like it says)

    umm @Kim can u do me a little favor? Could you like keep us updated on how being a vegan makes your body feel over time? Like idk the course of a few months, with monthly updates maybe. I mean... I wanted to do this myself but I would only do it if the results were really good instead of just following some hippie new age trend. K thanks.

    Sure! I have been doing it for about five weeks now and do think I have more energy and feel less sluggish (but that could also be because winter is over ). Will keep you posted!

    The tomatoes are good in this but not really necessary
    I used Barley and great Northern bcuz I couldn't find bulgur and cannellini.
